The Chef De Cuisine
School for related instruction:
All Apprentices must have previously graduated from an approved Culinary program that meets all the necessary curriculum needed to be an apprentice. Students must pass the apprenticeship interviewing session. The interviewing session is composed of an oral assessment by the apprenticeship council followed by a physical, practical testing and a basic kitchen quiz.
An apprentice must have previously attended and graduated an approved Culinary Program. Once done the CDCEF can help in securing an apprenticeship at a sponsoring house.
The Chefs de Cuisine Assn of San Diego Education Foundation (CDCEF) is the overseeing entity for the apprenticeship program while the ACF Chefs de Cuisine Assn of San Diego (CDC) is the local ACF sponsoring chapter. The CDCEF will help defray some cost but is not geared to paying all of the fees an apprentice will encounter.
